Sous Chef - The Archives, Galle Fort
Role Summary
The Archives is an intimate restaurant, cocktail bar, and boutique hotel in Galle Fort. We are seeking an experienced Sous Chef with a strong background in fine dining to lead from the kitchen floor, working closely with the team to manage day-to-day performance, organization, and standards.
Requirements
- Previous experience as a Sous Chef or strong Chef de Partie in a fine-dining restaurant, upscale standalone restaurant, or boutique hotel.
- Strong understanding of modern à la carte cooking, presentation, portion control, and consistency.
- Strong knowledge of food safety, hygiene, storage, labelling, stock rotation, and temperature control.
- Ability to lead by example, train, guide, and maintain discipline within the kitchen team.
- Calm, organized, and capable of performing under pressure.
- Strong attention to detail and a genuine interest in food, ingredients, and professional development.
Key Responsibilities
- Coordinate with suppliers and ensure accurate, timely ordering.
- Inspect all deliveries for quality, freshness, and temperature; reject substandard products.
- Maintain accurate stock levels, inventory counts, and records.
- Monitor wastage, food cost, and prevent over-ordering.
- Ensure strict adherence to FIFO procedures, labelling, and dating.
- Maintain standard recipes and ensure consistent dish preparation.
- Ensure the kitchen, storage areas, chillers, and freezers remain clean, organized, and inspection-ready.
