Role Summary

• Provide overall leadership and strategic direction for all Food & Beverage operations across the resort.
• Drive innovation in dining concepts, service culture, menus and guest experiences in line with brand ethos.
• Ensure exceptional quality, consistency and profitability across all outlets, events, and in-room dining.
• Mentor departmental heads and teams to deliver refined, personalised service.
• Oversee budgeting, cost control, forecasting and revenue optimisation initiatives.
• Maintain the highest standards of hygiene, safety and compliance across all operations.
• Collaborate closely with senior management to position The Fortress as a leading luxury boutique destination for dining in Galle.

Requirements

• Proven experience in a senior Food & Beverage leadership role within a luxury boutique hotel or high-end resort.
• Strong local and/or international experience with a deep understanding of global hospitality standards.
• An authoritative yet people-focused leadership style.
• Demonstrated track record as a change driver who introduces fresh ideas and elevates guest experiences.
• Exceptional operational, financial and strategic management skills.
• High level of professionalism, resilience and a hands-on approach with a commitment to excellence.
• Willingness to consistently go beyond the call of duty to exceed guest expectations.
