Position Summary

Chief Steward is responsible for leading and managing the stewarding department to ensure the highest standards of cleanliness, hygiene, and operational efficiency across all kitchens, F&B outlets & back-of-house areas. The role ensures compliance with food safety regulations, supports kitchen operations through effective ware washing and sanitation systems, and maintains optimal inventory control of all stewarding equipment while maximizing productivity, team development, controlling costs and maintaining the exceptional service support standards expected in a luxury hotel environment.

Key Responsibilities

• Oversee the overall stewarding operations including dishwashing, kitchen cleaning, and sanitation to ensure a consistently high level of hygiene across all food and beverage outlets.
• Manage and supervise stewarding staff, ensuring proper shift allocation, training, performance monitoring, and adherence to hotel standards.
• Maintain strict compliance with HACCP, food safety, and hygiene regulations throughout all kitchen and storage areas.
• Control inventory of crockery, cutlery, glassware, kitchen equipment, and cleaning chemicals while minimizing breakages and losses.
• Coordinate with Culinary leadership and F&B leadership to support smooth kitchen operations during peak service periods and special events.
• Ensure maintenance and proper functioning of dishwashing machines and stewarding equipment, coordinating repairs and preventative maintenance when required.

Requirements

• Diploma or certification in Hotel Management, Culinary Arts, or related field.
• Minimum 2 years of experience in stewarding operations in same capacity within a 4-5 star or luxury hotel.
• Strong knowledge of HACCP, hygiene standards, and kitchen sanitation practices.
• Proven leadership and team management skills. Strong organizational and inventory control skills.
• Ability to handle high-pressure environments and large banquet operations.
