Specialist Jaffna Cuisine Chef

Role Summary

Northern Virinthu is a fast-growing Jaffna food takeaway outlet chain in Colombo. We are seeking an experienced, passionate, and process-driven Chef to lead our kitchen operations, upholding the authenticity and quality of traditional Jaffna cuisine while managing operational standards.

Key Responsibilities

• Prepare and oversee the production of authentic Jaffna cuisine, maintaining consistency and quality.
• Manage daily kitchen operations to ensure smooth and efficient service.
• Maintain strict food cost controls and monitor consumption, wastage, and portion sizes.
• Ensure adherence to recipes, preparation methods, and operational procedures.
• Develop and maintain kitchen SOPs to improve efficiency and product consistency.
• Train, mentor, and supervise kitchen team members.
• Monitor stock levels and coordinate purchasing requirements.
• Ensure compliance with food safety, hygiene, and health regulations.
• Work closely with management to develop menus, promotions, and seasonal offerings.
• Drive continuous improvement in quality, guest satisfaction, and kitchen performance.

Requirements

• Proven experience as a Chef in a restaurant, hotel, or catering environment.
• Strong knowledge and hands-on experience in preparing authentic Jaffna and Sri Lankan cuisine.
• Process-driven mindset with the ability to establish, implement, and monitor kitchen SOPs and quality standards.
• Sound understanding of food cost control, portion management, yield management, and wastage reduction.
• Ability to plan menus and ensure consistency in food quality and presentation.
• Strong leadership skills with experience in training and supervising kitchen staff.
• Good knowledge of food hygiene, sanitation, and food safety standards.
• Ability to work under pressure and maintain high standards during busy service periods.
• Good organizational, communication, and time-management skills.
